A Chef's Cost Comparison

A cost comparison was done by a professional chef trying to make a comparison of making caramelized onions and sautéed mushrooms from scratch to All Ready Brands. The time and cost savings were huge.

This does not include the costs of waste, burnt and inconsistent product and all the other intangibles associated with production, like pot and pan clean up.

Sautéed Mushrooms

Yield: 7.33lb

Labor:

1 prep cook at $15 per hour x 1/2 hour = $7.50

1 line cook at $25 per hour (sautée, cool-down, wrap, store) x 1hour =$25

Total labor:

$32.50

Ingredients:

$22.65 (10 lb. cremini mushrooms) + 2.97 (1lb. butter) = $25.62

Total cost for 7.33 lbs: $58.12 or $7.93 lb. ($197 for 25 lbs)

Caramelized Onions

Yield: 24lbs

Labor:

1 prep cook at $15 per hour x 1.5 hours = $22.50

1 line cook at $25 per hour x 2.5 hours = $62.50

Total Labor:

$62.50 + $22.50 = $84.50

Ingredients:

$2.97 (butter) + $34 (cost of a 40 lb. bag of Vidalia onions) = $36.97

Total cost for 24 lbs: $121.47 or $5.06 lb.
